Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.

Method

  1. Remove all silver skin without excessive lean trim; portion uniformly by weight and thickness.

  2. Dry and season just before searing; use high effective surface heat for rapid browning.

  3. Sear all major surfaces, then reduce heat or transfer to gentler finish so the lean center does not overshoot.

  4. Rest briefly and monitor carryover; venison has little intramuscular fat to buffer overcooking.

  5. Slice across grain and serve immediately with sauce/accompaniment that supports rather than masks the meat.

Deep browned exterior, tender moist lean interior, clean game aroma without livery oxidation or dry chalkiness.

Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
