Production identity
- Target finished yield
- 7 kg · approximately 20 portions at 350 g
- Reference ratio
- Finished mass ÷ declared primary-input basis (batch reference ratio): 87.5% (8 kg declared primary input → 7 kg finished target)
- Total formula input
- 7 kg before trim, evaporation, absorption or transfer loss
- Time
- 50 min active · 75 min total
- Equipment
- wide sauté pans · fish spatulas · sheet racks · instant-read thermometer
- U.S. major allergens intentionally present
- Fish, Milk, Wheat
- Additional sensitivity note
- None listed.
- Holding / service
- Cook fish to order in waves; sauce may be staged but finished fish should not be held covered.
Raw-animal-food control: where this formula includes raw animal food, use the current authority-approved cooking time/temperature and the venue’s approved procedure. Sensory doneness never substitutes for a required food-safety endpoint.

Scaling table
Use the input-percentage column to audit transcription. The ½× and 2× columns scale ingredient mass only; process capacity must be revalidated.
| Ingredient | % of input mass | ½× | 1× | 2× |
|---|---|---|---|---|
| Gulf fish fillets | 71.43% | 2.5 kg | 5 kg | 10 kg |
| All-purpose flour | 6.43% | 225 g | 450 g | 900 g |
| Clarified butter | 7.14% | 250 g | 500 g | 1 kg |
| Whole butter | 7.14% | 250 g | 500 g | 1 kg |
| Lemon juice | 3.57% | 125 g | 250 g | 500 g |
| Parsley | 1.43% | 50 g | 100 g | 200 g |
| Capers | 1.71% | 60 g | 120 g | 240 g |
| Kosher salt | 1.00% | 35 g | 70 g | 140 g |
| Black pepper | 0.14% | 5 g | 10 g | 20 g |
Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.
Method
Dry and portion fish uniformly; season immediately before a very light flour dredge, shaking off all loose excess.
Sauté in a preheated pan with clarified butter, presentation side first, managing pan load so the fish browns rather than steaming.
Turn once when the first face is deeply golden and releases cleanly; finish to the operation’s validated fish safety endpoint without drying the thinner tail section.
Remove fish to a rack, wipe only burned flour from the pan, then brown whole butter to a hazelnut aroma before stopping it with lemon/capers.
Spoon sauce at pickup, finish parsley and serve immediately so crisp flour crust is not dissolved by a long sauce hold.
Working numbers
- 20 × 250 g raw fish portions
- Declared raw fish basis: 5.0 kg; total formula basis for yield gate: 8.0 kg
- Current USDA consumer guidance lists 145°F / 63°C for fish and shellfish
- Flour coating is thin; loose dredge is removed before the pan
Production verification
- Record actual finished batch weight before portioning; compare with target and investigate material variance.
- Record actual portion count and portion mass during service rather than inferring count from target yield.
- Verify current supplier labels for major allergens and document cross-contact limits of the actual station/equipment.
- Record the process/temperature checkpoints that are critical to this formula under the venue’s approved food-safety procedure.
- Taste or otherwise evaluate the formula at its actual service temperature and after the realistic hold/travel interval.
Batch record: target yield ____ · actual yield ____ · actual portions ____ · critical process checkpoints ____ · service hold ____ · waste/rework ____ · sensory result ____ · corrective action ____.
Sensory standard
Golden delicate crust, moist flaky fish, nutty browned butter, sharp lemon and briny caper; no scorched milk solids or soggy flour layer.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
Failure laboratory
| Failure | Likely mechanism | Correction |
|---|---|---|
| Pale soft fish | Pan load dropped temperature and released moisture | Use smaller waves on fully recovered pans. |
| Black bitter butter | Milk solids passed brown into burn before acid stopped cooking | Control pan heat and add lemon when butter reaches nutty brown, not black. |
Version control
KECB professional training formula; validate local regulatory requirements, supplier specifications and venue procedures before production. A measured correction to the recipe becomes a documented formula revision after a controlled test; do not let different cooks maintain invisible personal versions.
