Method
Form/portion patties without overworking and keep them cold until the griddle is recovered for the order.
Cook ground beef to the operation’s validated safety endpoint while building a deep crust; manage patty thickness so doneness and browning coincide.
Butter bread lightly and toast one face, then build with cheese, onions and the cooked patty so the bread stays crisp rather than absorbing raw beef purge.
Griddle the assembled sandwich over moderate heat until both outer faces are evenly browned and the cheese is fully melted.
Rest on a rack only long enough to set the cheese, cut and send with measured sauce/pickle; do not cover.

Sensory standard
Deep beef crust, fully melted cheese, sweet browned onions and crisp buttery bread with no grease-soaked center.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
