Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.

Method

  1. Dry and portion fish uniformly; season immediately before a very light flour dredge, shaking off all loose excess.

  2. Sauté in a preheated pan with clarified butter, presentation side first, managing pan load so the fish browns rather than steaming.

  3. Turn once when the first face is deeply golden and releases cleanly; finish to the operation’s validated fish safety endpoint without drying the thinner tail section.

  4. Remove fish to a rack, wipe only burned flour from the pan, then brown whole butter to a hazelnut aroma before stopping it with lemon/capers.

  5. Spoon sauce at pickup, finish parsley and serve immediately so crisp flour crust is not dissolved by a long sauce hold.

Sensory standard

Golden delicate crust, moist flaky fish, nutty browned butter, sharp lemon and briny caper; no scorched milk solids or soggy flour layer.

Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
