Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.

Method

  1. Preheat pans and oven so batter begins setting quickly and the bottom crust develops.

  2. Combine dry ingredients thoroughly; separately mix buttermilk, egg and fat.

  3. Fold wet into dry only until hydrated, then fold cheese and jalapeño without overmixing.

  4. Portion to a controlled pan depth and bake until center is set and edges pull slightly from the pan.

  5. Rest briefly before cutting, then weigh finished yield and portion by mass.

Moist crumb with corn texture, browned edges, balanced jalapeño/cheddar, no gummy center or cakey overmix.
