Method
Dry scallops thoroughly and hold uncovered/cold briefly if necessary to reduce surface moisture; season immediately before cooking.
Preheat pans until heat is sufficient for rapid browning, then add a thin film of oil.
Place scallops with space between them; do not move until a deep crust forms and the scallop releases readily.
Turn, add butter and baste briefly; stop while the center remains moist and just cooked through.
Drain excess fat, finish with lemon and sell immediately; record raw-to-cooked yield.

Sensory standard
Dark golden crust on broad faces, sweet marine aroma, moist tender center; no purge puddle, gray steaming or rubbery texture.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
