Method
Chill meat and mixing bowl. Combine milk/breadcrumbs and allow them to hydrate before mixing into meat.
Mix meat, salt, egg, panade, onion and seasonings only until cohesive; excessive mixing creates a rubbery sausage-like texture.
Shape loaves uniformly so center heating is predictable; smoke with clean combustion until exterior color develops.
Apply glaze late enough that sugars set without burning, and cook until ground-meat safety endpoint is achieved.
Rest, weigh yield and slice by mass/width standard.

Sensory standard
Moist cohesive slice, distinct meat texture, smoky browned exterior and set tangy glaze; no grease pocket or dense rubbery crumb.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
