Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.

Method

  1. Work in small enough batches that a cook can continuously control the whole egg mass rather than scraping a set skin from the pan.

  2. Melt butter without browning, add egg and stir deliberately over low-to-moderate heat, sweeping corners and bottom.

  3. Remove from heat before the desired final set because the pan and curd continue cooking from stored heat.

  4. Fold in crème fraîche to cool and enrich the curds, then season and add chives only after texture is established.

  5. Portion immediately onto warm—not scorching—plates; never place soft eggs into a long steam-table hold.

Small glossy tender curds that mound but remain creamy; no whey puddle, rubbery sheets or browned egg flavor.

Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
