Method
Hold wet components separately so the corn chips remain a dry crisp component until an order is called.
Scale chips into each service vessel, leaving enough headspace to turn the first bites without spilling.
Ladle chili and beans in a narrow band rather than flooding the entire surface, then stripe with measured queso.
Finish cheddar, onion, jalapeño and scallion after the hot components are portioned.
Send immediately; evaluate chip survival at 3 and 6 minutes during menu testing because real guest dwell time matters.

Sensory standard
Crunch remains through the first several bites; beef/chile is savory, queso creamy, raw onion sharp and jalapeño bright.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
