The sequence
Sharp knives, honed.
Cut on a stable surface.
Broken glass with a broom and a dedicated container.
And never by hand or with a towel.
The decisions
Whether the knife is sharp enough. A dull knife is a hazard rather than an inconvenience, per Module 5 — it requires more force and force is what slips.
And whether the tools are within reach. A station without a broom, dustpan, and dedicated container will produce cuts indefinitely regardless of who works it, per the bar's Module 2 — which makes it a layout finding rather than a behavior one.
What you are reading
The edge. The cut surface tells you — wet and translucent means dull.
And whether the tools are at the station.
What goes wrong here
Glass cleared by hand.
A dull knife.
And glass near an ice well or a product container.
Verification
Stand at each station and check for the tools. A missing dustpan is the finding.
