Lesson 5 — Equipment Condition as a Safety and Quality Variable

Where in the shift: setup and on a schedule.

The sequence

Check what has been repaired.

Remap the oven after any service call.

Filter and change oil on the schedule, logged.

And inspect wear points.

The decisions

Whether a piece of equipment is fit to run. A worn grind plate smears rather than cuts, per Module 37. A degraded door seal changes an oven's humidity. A failing element heats unevenly.

None of these announce themselves and all of them show up as inexplicable changes in product.

And whether a repair changed the behavior. A map from installation is not a map of today, per Module 4.

The equipment's actual behavior against its history.

And the oil.

What goes wrong here

Equipment condition treated as a maintenance matter and not a quality one.

The oven never remapped.

Verification

The maps and logs, dated.

The boundary

Maintenance beyond routine cleaning belongs with a qualified technician, and installation and ventilation are governed by building authorities.
