Part of the Honky-Tonk Food Director track. Lesson 7 of 10.
Prerequisites: Module 53.
The sequence
Identify every point where knowledge is concentrated.
Rank them by consequence.
Assign the extraction and the cross-training.
And verify by scheduling the expert off.
The decisions
Which knowledge to extract first. The pit, in most of these rooms — because it is what the room is known for and because quality drops on known days.
And whether it is an assignment or an intention. It has to be an assignment, because the person holding the knowledge works the most shifts and there is never a convenient time.
And what the failure actually means. If quality drops on the expert's days off, the finding is not that the other cooks are less capable — they are producing acceptable results with a fraction of the transmitted knowledge, per Module 53.
What you are reading
Which days quality drops.
What goes wrong here
The bench as a good intention.
And the expert never scheduled off, which means the transfer is never tested.
Verification
Schedule the expert off and compare the output.
The boundary
Employment and scheduling belong with a licensed attorney.
