Track Overview

The job: decide what the food program is, whether it earns its place, and where it is going.

The shift: none. This is a quarterly job with weekly touches, and its decisions surface months later.

What makes it hard: the job requires holding two truths at once. The kitchen is not the main business and it is not incidental eitherit is a retention mechanism whose revenue lands at the bar, and a director who forgets either half will either starve the kitchen or over-invest in it.

Prerequisites: Modules 35, 42, 46, 47, 48, 49, 50, 52, 53. Plus the Kitchen Manager track.
