The sequence
Get the booking information to the kitchen.
Build the channel between kitchen, bar, floor, and door.
And align the simplification decisions.
The decisions
What information crosses. The advance count, the act, the set times, and anything unusual — all of which exists and stops before it reaches the people who need it.
And who decides on a bad night. A kitchen simplifying while the bar does not, or a floor telling guests something different from what the kitchen decided, is worse than either problem alone.
Which means the contingency plan is a room-level document rather than a departmental one.
