Lesson 9 — Working With the Room's Other Departments

Part of the Honky-Tonk Food Director track. Lesson 9 of 10.

Prerequisites: Modules 42, 44, and the bar's Modules 50 and 57.

The sequence

Get the booking information to the kitchen.

Build the channel between kitchen, bar, floor, and door.

And align the simplification decisions.

The decisions

What information crosses. The advance count, the act, the set times, and anything unusualall of which exists and stops before it reaches the people who need it.

And who decides on a bad night. A kitchen simplifying while the bar does not, or a floor telling guests something different from what the kitchen decided, is worse than either problem alone.

Which means the contingency plan is a room-level document rather than a departmental one.

What you are reading

Whether the departments know the same things.

What goes wrong here

Four departments and no channel.

And a simplification the front of house was not told about.

Verification

Ask each department what tonight's plan is. If the answers differ, that is the finding.

The boundary

None specific.
