Lesson 10 — Building the Bench

Part of the Kitchen Manager track. Lesson 10 of 10.

Where in the shift: never, which is the problem.

Prerequisites: Module 53.

The sequence

Identify the concentrated knowledge.

Extract the decision points.

Convert them to checkable cues.

Train with verification.

And run the station without the expert.

The decisions

Whether the room's quality depends on one person's attendance. In most of these rooms it does, per Module 53 — and that is a risk independent of anything about that person.

Whether to make it someone's assignment. It has to be, because the person holding the knowledge is also the person working the most shifts and there is never a convenient time.

And how to extract it. Watch for decision points rather than actions and ask at each one what they were readingbecause expert practice becomes automatic and the practitioner stops being able to enumerate it.

"When it's ready" is true and useless, and getting past it is work.

What you are reading

Which days quality drops.

And what a trainee produces unsupervised.

What goes wrong here

Shadowing called training. Exposure rather than skill transfer.

Sign-off on attendance.

And the bench treated as a good intention rather than an assignment.

Verification

Run the critical station without its expert for a full service and compare against the reference. The only verification that means anything.

The boundary

Employment matters belong with a licensed attorney.
