Lesson 9 — Planning a Sold-Out Night

The sequence

Get the count.

Set the pars and the prep sequence.

Stage the plan.

Write four contingencies.

And pre-authorize the simplification.

The decisions

What the plan cannot survive. This is the lesson.

A single point is a resource with no alternate path — one fryer with no re-route decided, staffing with no reserve, one person who knows the pit.

A single point is not a problem until it fails, which is exactly why nobody finds them by waiting. They are found by asking in advance.

Four written answers: equipment down, someone does not show, crowd exceeds the count, incident takes two people off the floor for twenty minutes.

Twenty minutes on a Thursday.

And whether the simplification is authorized in advance. A menu cut by choice at seven is better service than a menu that degrades by accident at nineand pre-authorizing it is what makes it choosable under pressure.

What goes wrong here

Everything planned and no contingency. Two ordinary failures arriving in the window reserved for staging, and the night is in serious trouble.

And bad luck blamedequipment fails and people call out, and both are foreseeable.
