Pit Production Cook

Track Overview

The job: run the pit from fire to service. Load, manage, judge, hold, slice.

The shift: starts before dawn or the night before, depending on the cook, and ends when the last of it is sliced.

What makes it hard in this room: the pit cook is frequently also running the fryer, the line, or the pass — which means the pit is being managed in the gaps, and the technique has to survive that.

Prerequisites for the whole track: Modules 7, 8, 9, 12, 13, 36, 37, 45. A reader without those will be able to follow the sequence and will not be able to make the decisions.

What this track does not cover: the food safety framework, which is Food Safety Control, and equipment safety, which is Equipment and Workplace Safety. Both are prerequisites in practice.
