Lesson 3 — Loading and the First Hours

Where in the shift: the load, and the two to three hours after.

Prerequisites: Modules 7, 12, 36, 37.

The sequence

Let the pit recover from any door opening before you load.

Load fast. Every second the door is open costs chamber temperature and wall heat.

Position by the chamber's own pattern — every pit has a hot side and a cool side and the cook knows where.

Then leave it alone for a stretch and watch the stack.

And if there is pork on with beef, manage the wood load for the pork, per Module 37 — because pork absorbs smoke faster and the first hours are when absorption is highest.

The decisions

Where each piece goes. Thicker to the hotter side, thinner to the cooler, and rotate if the pit's pattern is severe.

How much wood in the first hours. This is the smoke-load decision and it is front-weighted — absorption is fastest when the surface is cold and wet, per Module 37. A wood load calibrated on brisket will overwhelm ribs.

Whether to spritz. Every opening costs recovery, and the benefit is a slower surface dry, which delays bark. Frequently the honest answer is that it is a habit rather than a decision, and a cook who stops spritzing and compares is running the only experiment that answers it.

What you are reading

The stack, still. The first hours are when a fire problem is cheapest to fix.

Surface color developing. Slow and even is right. Darkening fast in the first hour means the chamber is running hotter than the gauge suggests or the surface dried early.

And the chamber's recovery after the loadhow long the gauge takes to come back tells you what the walls are doing.

What goes wrong here

Loaded into an unrecovered chamber. The first hour happens cooler than planned.

Over-smoked in the first hours. Acrid, ashy bitterness dominating, worst on pork. The tell: taste a piece from the surface against the interior — if the interior is clean and the surface is harsh, the problem was in the first two hours.

Spritzed on a schedule rather than on a decision.

Verification

Time the chamber's recovery after the load and record it. That number is a property of the pit and most cooks do not have it.

And the surface-versus-interior taste at the end of the cook is the verification for the smoke load.

The boundary

Cooking temperatures and time controls are governed by the local health authority; Food Safety Control owns them.
