Lesson 7 — The Set Break

Where in the shift: twice, on a published schedule.

Prerequisites: Modules 4, 25, 42, 44.

The sequence

Stage in the last ten minutes of the set.

Work the break.

Reset during the set that follows.

And do it again.

The decisions

What to stage. Everything that can be positioned in advance — par-fried product where it tolerates it, portioned components, pans, plates, and anything the fryer will need.

The last ten minutes of a set are the most valuable ten minutes of the night, per Module 50 on the bar side, and the same is true here.

What to simplify. A menu cut by choice is better service than a full menu executed badlyand pre-authorizing it is what makes it choosable under pressure.

And the reset. A kitchen that handles the first break and collapses at the second did not recover — the set between is the only window and it gets spent on backlog rather than on preparation.

What you are reading

The rail's growth rate, not its depth. Two tickets in five minutes is the signal.

The fryer's sound.

And the staging state — full or not, before the break rather than during it.

What goes wrong here

Not staged. The cook leaves the station during the surge, which is the most visible symptom.

Everything dropped at once. The temperature collapse.

And no reseta second break materially worse than the first with everything else identical.

Verification

Watch what the kitchen does with the set. Standing still and observing for one set is uncomfortable and it is the exercise that reveals the reset problem.
