Lesson 8 — Holding and the Line's Own Product

Prerequisites: Modules 10, 11, 45.

The sequence

Tape a time on it.

Cover rather than stir.

Taste on a schedule.

Correct once.

And remake rather than correct twice.

The decisions

When to correct and when to remake. The decision Module 45 exists for.

Roughly one correction for a roux-thickened sauce or a queso. Past that, a fresh batch is faster and better than a third rescue.

And the test: if you cannot say what the product originally was, it is past correction.

Whether to stir. Cover instead. Stirring prevents skinning and applies shear, and shear breaks the starch, per Module 10.

What you are reading

Body, on a schedule — not when it looks wrong.

The gloss. A queso losing its uniform sheen with a faint gloss of free fat at the edge is three seconds of warning, per Module 11.

And the tape.

What goes wrong here

Corrected repeatedly. Three textures in one pan and a flavor nobody can place.

Held past the quality window while safe. Every log correct and nobody would order it twice.

And no time on the pannobody can say how long.

Verification

Pick a container mid-service and reconstruct its history. If you cannot, the system does not work.

The boundary

Holding, cooling, and reheating are governed by the local health authority. A product within its quality window may be outside its safety window and the reverse.
