Where in the shift: the end, when everyone is tired.
Prerequisites: Modules 2, 17, 45, 52.
The sequence
Cool properly — shallow, probed at the center.
Save what should be saved.
Label and date.
Clean the equipment to the schedule.
And record what the next shift needs.
The decisions
Container depth, again, and it is the decision made at midnight by someone who wants to go home. Per Module 2, it is the governing variable and it has no sensory warning.
What to save. Drippings, trim, usable by-product — and it requires a designated container and a named owner, because at the end of a long shift with nothing designated it goes in the bin, per Module 17.
And whether the fryer needs filtering. On a schedule, logged — because an unlogged filtration cannot be proven and generally did not happen.
What you are reading

And the oil, for tomorrow.
What goes wrong here
Cooled in depth.
Drippings discarded.
And equipment cleaning deferred, which shortens oil life and produces tomorrow's problem.
Verification
Probe both surface and center and record both.
And a walk-through: is anything undated?
