The sequence

Build a reference sample.

Build a fault sample where possible.

Taste them side by side.

And name the almost-right.

The decisions

Whether to create faults deliberately. Yes, where it is safe and legal to do so — because reading about a fault teaches almost nothing and tasting one teaches it permanently.

Over-toast a chile. Hold a gravy past its window. Warm a biscuit dough on purpose.

And whether to teach the discrimination. This is the highest-value content in the lessonover-worked eats tough and pulls; warm-fat eats dense and crumbles. Both look flat and they have opposite fixes, and changing the wrong one costs a week.

The boundary
