Lesson 8 — Training for the Busy Night

The sequence

Train the normal case first.

Then train the compression.

Name what does not flex.

And practice the simplification.

The decisions

What to teach about volume. Not "work faster."

Speed is eliminated motion rather than faster motion, per the bar's Module 48 — and rushing produces errors, and an error costs a remake, which is the slowest possible outcome.

Which controls do not flex. This has to be named explicitly, per Module 1 — because the unnamed ones are the ones that go, and a cook who has not been told will make a reasonable guess that does not match anyone's intention.

And whether the trainee knows what to sacrifice. A deliberate simplification is a skill and it has to be taught — otherwise the menu degrades by accident.
