The decisions
Who learns what. Every critical station needs two others trained and verified.
And whether the training happened. The test is the expert's day off — if quality drops, the transfer did not occur, and the finding is not that the other cooks are less capable.
They are producing acceptable results with a fraction of the transmitted knowledge, which if anything argues they are capable.
