Tequila and agave spirits

Agave spirits require accurate category language. Tequila, mezcal, raicilla and other regional spirits are not a single smoky-to-smooth ladder. A working bar should understand plant, region, cooking, fermentation, still character, maturation and proof without pretending every producer follows the same process.

The operating question is whether every Tequila and agave spirits bottle has a distinct service role, a controlled measure, a storage standard and a tested substitution rule.

Program and purchasing decisions

  • Keep tequila categories and regional agave spirits distinct in menus, staff language and substitutions.
  • Use blanco, reposado, añejo and cristalino terms accurately; cristalino describes filtration treatment, not a separate age class.
  • Do not define mezcal or raicilla only by smoke. Fermentation, agave species and production create fruit, earth, mineral and savory character.
  • Choose a core mixing tequila by cooked-agave flavor, proof, availability and cost after dilution.
  • Require transparent producer and category information before repeating claims about additives, agave age or traditional methods.

Receiving, storage and service standard

  1. Taste candidates neat and in the house Margarita or Ranch Water at the approved measure.
  2. Store upright, protect closures and monitor crystalized residue around higher-sugar flavored products.
  3. Write substitution rules by category and drink; raicilla or mezcal is not an automatic tequila replacement.
  4. Communicate proof and pour size clearly for neat or flight service.
  5. Review specialty agave bottles for depletion and staff knowledge so rare stock does not become dead inventory.

Training and sign-off

Compare a blanco tequila, reposado, cristalino, mezcal and raicilla at matched proof. The trainee must describe each without using smooth or smoky as the only adjective, place each in a menu role and reject one misleading category claim.
