Coffee tea and cacao

Coffee, tea and cacao bring roast, tannin, bitterness and aromatic complexity, but they are highly sensitive to extraction, oxygen, temperature and time. A bar must treat espresso, cold brew, brewed tea, concentrates and cacao infusions as separate production systems.

Receiving, preparation and holding standard

  1. Use clean water and sanitized equipment free of old coffee oil or tea residue.
  2. Weigh dry product and water, start a timer and record batch yield.
  3. Cool prepared coffee or tea rapidly when it will be held cold.
  4. Label the brew time and discard point; do not refresh an old batch with new product.
  5. Taste for oxidation, harsh tannin, weak extraction and sediment before service.

Aroma

Roast, tea or cacao character remains fresh rather than papery or stale.

Training and sign-off

Prepare espresso, cold brew, black tea, hibiscus tea and a cacao infusion using written ratios. The trainee must record extraction variables, identify under- and over-extracted samples and design a safe cooling and holding plan for one batch.
