  • Choose crystal size for the job: fine salt adheres densely, kosher gives moderate texture, and flaky salt creates large irregular bursts.
  • Write rim blends by weight, including chile, sugar or citrus powder, and label allergens in commercial blends.
  • Use a partial rim when guest preference or drink balance benefits from an unseasoned side.
  • Set a consistent wetting agent and rim depth; random citrus rubbing creates uneven adhesion.
  • Keep seasoning trays shallow, covered between service periods and replaced when wet or contaminated.

Receiving, preparation and holding standard

  1. Prepare a clean, dry tray with a measured amount of fresh blend.
  2. Moisten only the outside edge of the glass unless the spec calls for interior seasoning.
  3. Roll or press to the defined depth without burying the rim.
  4. Tap off loose excess before adding ice and liquid.
  5. Discard used seasoning at the end of the service window; do not return it to bulk storage.
