Receiving, preparation and holding standard

  1. Sanitize containers and tools before production.
  2. Weigh sweetener and water, heat only as needed, and record final yield.
  3. Cool promptly, bottle in a clean container and label name, concentration, production date and discard date.
  4. Use a clean pour spout or pump and never top old syrup with new.
  5. Taste and inspect daily for fermentation, mold, crystallization and aroma loss.

Training and sign-off
