Class 4 — The Large Cube and In-Glass Dilution

Part of the Ice and Dilution school. Class 4 of 6.


The capability: you account for what happens to a drink after it leaves your hands.

Prerequisites: Modules 9, 35, 49.

The practice

Build an Old Fashioned and taste it at zero, three, ten, and twenty minutes. Record what changes.

Then build one over a large cube and one over standard cubes and run the same timeline.

Then build a round of six with the Old Fashioned first, and again with it last. Taste both Old Fashioneds, per Module 49.

And carry one to the far end of the room and taste it there.

The reference

The zero-minute version, which is what the bartender tasted and what the guest never gets.

What you are building

The habit of thinking past the pass.

A spirit-forward drink over a large cube is designed to be sipped for twenty minutes and the specification has to account for that — which means the drink should be correct at the middle rather than at the first sip.

And the round sequencing follows from it: spirit-forward last, because it is the one that keeps diluting while it waits.
