When and why to use the method
- Choose the method from desired aeration, clarity, texture, dilution and service vessel.
- Use stirring for clear spirit-forward drinks, shaking for rapid chill and aeration, and building only when integration can be controlled in the glass.
- Reserve muddling for deliberate extraction and protect herbs and fruit from overworking.
- Use rolling, swizzling, throwing, layering and blending only where their specific texture or presentation justifies training and setup.
- Set ice type, time and motion for each approved method.
