Measurement tools protect recipe, batch and purchasing accuracy. Jiggers, graduated pitchers, scales, refractometers and hydrometers each measure different properties and have different limits; owning a digital display does not remove the need for calibration and correct units.

Commissioning, use and maintenance standard

Training and sign-off

Verify a jigger, graduated pitcher, pocket scale and refractometer against references. The trainee must select the correct tool for six quantities, record units and reject one measurement that the instrument cannot validly provide.
