The Washing and sanitation tools equipment standard covers job fit, rated capacity, safe setup, cleaning, maintenance and the defect that removes the tool from service.

Selection, capacity and installation decisions

  • Set sink wash, rinse and sanitize sequence with temperatures and chemical concentration appropriate to the product in use.
  • Use test strips matched to the sanitizer chemistry and range; old or wet strips are unreliable.
  • Treat glass rinsers as pre-service dust and temperature tools, not substitutes for washing.
  • Specify polisher cloth, heat and maintenance so the machine does not transfer grease or lint.
  • Provide drainage, splash control and storage that keep clean glass separate from dirty return paths.

Commissioning, use and maintenance standard

  1. Clean and fill sink compartments in the correct order and verify sanitizer concentration.
  2. Scrape and wash glassware before rinsing and full sanitizer contact.
  3. Air-dry inverted on a clean surface; do not towel-dry sanitized glasses.
  4. Flush and clean rinser nozzles and drains on schedule.
  5. Inspect polisher heads, cloths and internal surfaces before use and replace contaminated material.

Chemical concentration

Sanitizer is within the labeled effective range.

Contact time

Glass remains in solution for the required duration.

Beer cleanliness

No grease, lipstick, detergent or sanitizer film disrupts foam.

Drying

Glass air-dries without towel contamination or trapped water.

Wrong test strip

A strip for one sanitizer chemistry is used on another.

Rinser substitution

A quick spray is treated as washing and sanitizing.

Training and sign-off

Set up a three-compartment sink, verify sanitizer with the correct strip, process a rack of glassware and identify a beer-clean failure. The trainee must also demonstrate the limited role of a glass rinser and complete polisher inspection.
