Culinary Academy · Curriculum accountability

Professional benchmark

A transparent coverage crosswalk showing what the Chef Path teaches, where each professional domain appears, and what evidence demonstrates practical culinary competence.

What this benchmark means

This benchmark is Keep ’Em Coming Back’s own curriculum-accountability standard. A domain is marked covered only when the curriculum assigns it to one or more sequential modules and the rendered instruction includes technical reasoning, specifications, laboratory work, evidence requirements or chef judgment relevant to that domain.

Coverage is evaluated by what the learner can understand, produce, measure, diagnose and defend in a working kitchen—not by comparison language or outside affiliation.

What the path intentionally adds

The Chef Path goes beyond a generic cooking-method library by requiring measured production evidence, failure diagnosis, high-volume service adaptation, Texas regional specialization, purchasing and food-cost control, sensory evaluation, waste engineering, culinary R&D, leadership and a final service capstone. These additions are part of the site’s operating mission; they are not presented as a copy of any school curriculum.

Food-safety boundary

Food Code and Texas guidance are used as regulatory reference points, but local requirements and the establishment’s approved procedures control. The curriculum never replaces a permit authority, a person-in-charge decision, or required regulatory training.
