Method
Season and brown short ribs in batches, building fond without crowding the pan.
Brown mirepoix, cook tomato paste and deglaze with wine, scraping all usable fond.
Return ribs and add stock to partial braising depth; cover and cook gently until connective tissue softens and bone resistance changes.
Remove ribs at tenderness before sauce reduction. Strain, defat and reduce braising liquid separately.
Return ribs to finished sauce for service/reheat and record edible yield.

Sensory standard
Deep beef flavor, fork-tender but intact meat, gelatin-rich glossy sauce, no greasy cap or dry stringy fibers.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
