Method
Cook flour in rendered fat to a pale blond roux that removes raw flour aroma while preserving the gravy’s light color.
Whisk in hot milk gradually, establishing a smooth base before adding the remainder.
Bring to a gentle simmer and cook until flour is fully hydrated; scrape pan corners to prevent scorching.
Season heavily enough to stand beside fried meat but only after full thickening and concentration.
Weigh to 5 kg and standardize service viscosity; correct with hot milk if hold thickens it.

Sensory standard
Pale, glossy, pepper-forward, clean dairy/fried-fat savor, flows over steak without becoming paste or watery milk sauce.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
