Method
Cook pasta in salted water until slightly firmer than final service texture; drain without rinsing unless the production plan specifically requires chilling.
Heat milk/béchamel gently and add cheese in stages off aggressive heat so the emulsion remains smooth.
Season sauce with mustard, pepper and hot sauce before combining; account for pasta absorption during hold.
Fold hot pasta into sauce and portion to pans no deeper than required for service/holding.
Weigh to 10 kg, record viscosity at 0/20/40 minutes and adjust future sauce ratio to the actual hold window.

Sensory standard
Creamy sauce clings to distinct tender pasta, cheese flavor clean and sharp, no oil separation, paste-like hold or dry skin.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
