Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.

Method

  1. Cook flour in rendered fat to a pale blond roux that removes raw flour aroma while preserving the gravy’s light color.

  2. Whisk in hot milk gradually, establishing a smooth base before adding the remainder.

  3. Bring to a gentle simmer and cook until flour is fully hydrated; scrape pan corners to prevent scorching.

  4. Season heavily enough to stand beside fried meat but only after full thickening and concentration.

  5. Weigh to 5 kg and standardize service viscosity; correct with hot milk if hold thickens it.
