Method

  1. Score skin shallowly without cutting flesh; season and start skin-side down in a cool-to-moderate pan so fat renders before skin burns.

  2. Drain excess rendered fat as needed while maintaining skin contact and gradually increasing heat to crispness.

  3. Turn briefly to finish flesh side; use controlled endpoint appropriate to product/safety standard.

  4. Rest skin-side up so crust stays crisp and carryover stabilizes the center.

  5. Weigh cooked yield, slice across grain just before service and use rendered duck fat as a separately controlled kitchen product.
