Formula — 1× target batch

|---|---|---|
| Fresh okra | 3.5 kg | 1.5–2 cm slices |
| Buttermilk | 650 g | |
| Cornmeal | 600 g | |
| All-purpose flour | 150 g | |
| Kosher salt | 60 g | |
| Black pepper | 20 g | |

Scaling table
Use the input-percentage column to audit transcription. The ½× and 2× columns scale ingredient mass only; process capacity must be revalidated.
| Ingredient | % of input mass | ½× | 1× | 2× |
|---|---|---|---|---|
| Fresh okra | 70.00% | 1.75 kg | 3.5 kg | 7 kg |
| Buttermilk | 13.00% | 325 g | 650 g | 1.3 kg |
| Cornmeal | 12.00% | 300 g | 600 g | 1.2 kg |
| All-purpose flour | 3.00% | 75 g | 150 g | 300 g |
| Kosher salt | 1.20% | 30 g | 60 g | 120 g |
| Black pepper | 0.40% | 10 g | 20 g | 40 g |
| Cayenne/paprika | 0.40% | 10 g | 20 g | 40 g |
Ingredient weights scale arithmetically; pan geometry, heat input, evaporation, fryer recovery, mixing shear, proofing/bake behavior and holding capacity do not. Revalidate process whenever batch size or equipment changes.
Method
Cut okra uniformly shortly before breading; prolonged cut holding increases mucilage on surfaces.
Toss lightly with buttermilk, drain excess and coat in cornmeal-flour seasoning without compressing into paste.
Shake away loose meal before frying so fryer sediment does not burn excessively.
Fry in batches that preserve recovery until exterior is crisp and interior loses raw grassy character while remaining tender.
Drain, season and serve immediately; do not cover the batch.
Working numbers
- Finished formula target: 5 kg including breading pickup
- Cornmeal dominates dredge for a dry Texas crust
- Cut size controls interior cook
- Short uncovered hold only
Production verification
- Record actual finished batch weight before portioning; compare with target and investigate material variance.
- Record actual portion count and portion mass during service rather than inferring count from target yield.
- Verify current supplier labels for major allergens and document cross-contact limits of the actual station/equipment.
- Record the process/temperature checkpoints that are critical to this formula under the venue’s approved food-safety procedure.
- Taste or otherwise evaluate the formula at its actual service temperature and after the realistic hold/travel interval.
Batch record: target yield ____ · actual yield ____ · actual portions ____ · critical process checkpoints ____ · service hold ____ · waste/rework ____ · sensory result ____ · corrective action ____.
Sensory standard
Dry crisp cornmeal crust, tender green okra, slight fresh vegetal character, no slimy wet coating or burned meal bitterness.
Evaluate the control batch at pickup and again after the realistic handoff or hold. The written standard should describe the point at which the formula is still sellable and the point at which it must be remade, repurposed under an approved plan or discarded.
Failure laboratory
| Failure | Likely mechanism | Correction |
|---|---|---|
| Slimy coating | Cut okra sat too long wet before breading | Cut closer to frying and drain buttermilk thoroughly. |
| Bitter specks | Loose meal accumulated/burned in oil | Shake excess dredge and filter fryer appropriately. |
Version control
KECB professional training formula; validate local regulatory requirements, supplier specifications and venue procedures before production. A measured correction to the recipe becomes a documented formula revision after a controlled test; do not let different cooks maintain invisible personal versions.
