The sequence
Write the standard for the signature items.
Build references.
Set a calibration cadence.
And make it somebody's assignment.
The decisions
What has to be written. The signature items at minimum — because for a room whose identity rests on one or two dishes, the written standard is the mechanism by which the thing the room is known for survives a staffing change, per Module 50.
And whose job it is. Named, or it does not happen — a cadence assigned to everyone is assigned to nobody.
What you are reading
Whether the standard exists in a usable form, and whether anyone has produced it.
What goes wrong here
The standard living in one person's hands.
And calibration complaint-driven — which means the guests found it first.
Verification
Produce the signature item to the written spec and taste it against current production.
