Lesson 8 — Working With the Bar

The sequence

Know the bar's constraints.

Sequence food and drink together where it matters.

And pass observations both ways.

The decisions

Whether to fire food against a drink order. A table that has drinks and no food for twenty minutes is a different experience than one where they arrive together, and the coordination is nobody's job unless it is assigned.

And what the bar needs to know from the floor. Refusals, guests being watched, and anything the door should knowbecause a refusal communicated only to the other bartender leaves the door unaware, per the bar's Module 52.
