The sequence
Write the standard for the signature items.
Build a reference.
Calibrate on a cadence.
And investigate a complaint by rebuilding from the spec.
The decisions
Whether a standard exists in a usable form. A written standard with appearance, aroma, texture, and named defects — at the specificity of the Phase One sensory standards.
And whether anyone has tasted it. A standard written and never produced is a description rather than a standard.
How to read a drift complaint. Both reports are honest, per Module 50.
The guests are detecting cumulative drift. The kitchen cannot detect it because the kitchen was present for every increment — their reference is last week, which makes them a drift-tracking instrument rather than a standard-holding one.
Which means the guests are currently the detection system, and that is the problem.
What you are reading
The current production against the written spec, not against memory.
And what changed that nobody logged — a vendor substitution, a repair, a new person, a verbal recipe adjustment.
What goes wrong here
No reference. Unresolvable disagreements.
Calibration complaint-driven.
And a drift attributed to the guests' tastes changing, which does not produce a coordinated report.
Verification
Produce the item to the written spec and taste it against current production. If they differ, the guests are right.
