Build architecture and menu decisions

  • Set the spirit-acid-sweet ratio first, then determine how much soda the glass and ice can support.
  • Distinguish Collins builds from fizzes: a fizz may use a shorter glass, more aeration or foam, while a Collins is usually lengthened over ice.
  • Choose ice that chills without occupying so much volume that the soda portion disappears.
  • Use fresh citrus and calibrated syrup because soda will expose, not hide, an unbalanced sour.

Production and rush-service standard

  1. Measure spirit, citrus and sweetener into the shaker or glass before opening soda.
  2. Shake only the noncarbonated ingredients when the spec calls for aeration.
  3. Strain over fresh ice, leave headroom and add cold soda last.
  4. Lift once with a barspoon to integrate the bottom without beating out bubbles.
  5. Garnish after carbonation so fruit and straws do not obstruct the pour.
