Build architecture and menu decisions

  • Define the house cranberry product and whether it is sweetened juice cocktail, lower-sugar blend or pure juice.

Production and rush-service standard

  1. Fill the glass with hard ice and measure vodka before adding juice.
  2. Add the specified juice volumes, then soda last where required.
  3. Lift once from the bottom to integrate color and flavor.
  4. Check the final color against the house standard; unusually dark drinks often signal over-juice or poor measurement.
  5. Return opened juice to refrigeration and rotate by labeled prep date.

Training and sign-off

Build a Cape Codder, Sea Breeze, Bay Breeze and Vodka Soda in identical glasses. The trainee must state the juice and soda differences before pouring, then reproduce the four by measure with matching color and fill.
