The capability: you can derive a shelf life rather than assume one.
Prerequisites: Modules 14, 47.
The practice
Take five house products and identify which preservation levers each has — acid, sugar, alcohol, and cold, per Module 14.
Derive a shelf life for each.
Then test one: taste it daily until it changes, and compare against the derivation.
Then date everything on the prep shelf today.
And run the three-minute open check for a month — every juice, every syrup, the vermouth, the by-the-glass wine. Record what it finds.

What you are building
The habit of calculating rather than guessing.
And the recognition that an undated container permits only two actions and both are guesses — use it on an assumption, or discard it on an assumption, per Module 47. The label converts a coin flip into a decision.
Verification and boundary
The dated shelf, and a month of open-check findings.
Boundary: shelf-life determination, labeling, and cold holding are governed by the local health authority, and processes relying on acid or water activity may require documented validation.
