Read every agave label on the back bar.
Taste the well neat against a known additive-free reference at a similar price.
Then taste an autoclave product against a brick-oven one and describe the cooked-agave difference.
Then taste three mezcals from different agave varieties and describe what differs besides smoke.
And audit the house margarita spec's history.

What you are building
The ability to make the well decision knowingly.
Some rooms want smooth and approachable in the well and that is legitimate — what is not legitimate is making the choice by accident and rewriting the house drink to conceal it, per Module 21.
