The capability: you run a frozen program that is consistent and clean.
Prerequisites: Modules 39, 44.
The practice
Check the mix against the machine's freezing range.
Taste the mix frozen, at serving consistency — not at room temperature, because cold suppresses sweetness substantially.
Then adjust the acid upward and taste again, since the cold mutes it.
Then open the machine and look.
And run a full disassembly cleaning on the manufacturer's schedule with a logged date.
The reference
The mix at serving consistency, which is the only honest tasting condition.
What you are building
The separation between a recipe problem and a machine problem — because a mix out of the freezing range cannot be fixed by adjusting the machine, and adjusting the machine is what everyone tries first.
Verification and boundary
The frozen tasting and the logged cleaning.
Boundary: machine sanitation is governed by the manufacturer's instructions and the local health authority; dairy-containing products carry additional requirements.
