Batching and production

Batching is controlled manufacturing for service. The bar must scale by weight or exact volume, account for final yield, dilution and package loss, and keep every batch traceable from source recipe through service vessel. Bigger math without process control only produces a larger mistake.

The Batching and production method is complete only when a worker can choose it for the right reason, execute the sequence, read the result and correct a failure under service pressure.

When and why to use the method

  • Decide which ingredients may be batched together and which must remain fresh, carbonated, perishable or added at service.
  • Scale from the approved single-serve specification using a documented multiplier and unit system.
  • Choose weight for small, viscous or high-impact ingredients and calibrated volume for suitable liquids.
  • Account for planned dilution, transfer loss and line or keg hold-up before calculating yield.
  • Set batch size from realistic depletion and shelf life rather than maximum container capacity.

Execution sequence and service cues

  1. Verify the source recipe and target number of servings before opening product.
  2. Tare containers, weigh or measure each ingredient independently and record lot or bottle changes where material.
  3. Mix thoroughly, measure final yield and compare it with theoretical yield.
  4. Label product name, recipe version, production time, preparer, storage and discard information.
  5. Taste a finished serving at service dilution before releasing the batch.

Training and sign-off

Scale one five-ingredient cocktail to 12, 48 and 100 servings. The trainee must choose weight or volume for each ingredient, calculate planned dilution and loss, produce the 12-serving batch, and reconcile actual yield before sign-off.
