Draft and packaged beer service is a chain from cold storage to clean glass. Opening a package, recognizing beer-clean glass and assembling beer-and-shot orders are different motions, but all depend on temperature, foam control, glass safety and an orderly handoff.

The Draft and beer service method is complete only when a worker can choose it for the right reason, execute the sequence, read the result and correct a failure under service pressure.
When and why to use the method
- Define acceptable package condition, service temperature and glass for every high-volume beer.
- Keep beer glassware free of grease, sanitizer residue and food contact.
- Set a standard for opening cans and bottles without chipped rims, torn tabs or cap debris.
- Sequence beer-and-shot combinations so neither beer warms nor the shot sits unattended.
- Treat chronic foam as a system fault to diagnose, not a cue to dump product until the glass fills.

Execution sequence and service cues
- Inspect the glass and package before opening.
- Open away from the guest’s face and control cap, tab or cork immediately.
- Pour to the style and package, allowing an intentional head rather than forcing a flat brim.
- Prepare accompanying shot or garnish in a stable sequence and verify the complete order.
- Reset opener, tray and glass area before the next round.

Training and sign-off
Run a station drill with bottled beer, canned beer, draft beer and three beer-and-shot orders. The trainee must identify a contaminated glass, reject a damaged package, produce correct foam and complete each paired handoff without delay.
